Guacamole, by its nature, needs to intercept and and all keyboard events it is given via JavaScript. It's odd that IE11's dev tools would not take control of the keyboard when focus is on its find box, but that is definitely an issue with IE11, not with Guacamole.

Whatever I am typing it is typing in Notepad ( if it is opened ) but the focus of the mouse is in the Find box of the development tool. Same happened when I tried to copy the text in development tool. Something to do with the focus I guess.
