[PR] TIKA-4915 Helm chart CI should smoke Tika Server detect, metadata, and text extract [tika-helm]

Addresses [TIKA-4915](https://issues.apache.org/jira/browse/TIKA-4915)
* Replaces `GET /tika` 405-as-success with a real smoke: `PUT values.schema.json` through `/detect`, `/meta`, and `/tika`, plus GET `/version`.
* The same checks are on `helm test` and the kind install-test Job. No new fixture; assertions are not tied to chart/image versions.
* `ct list-changed --charts .` so install-test actually runs on this root chart.
