[I] variant schema examples use (VARIANT) rather than (VARIANT(1)) [parquet-format]

### Describe the bug, including details regarding any error messages, version, and platform.
The schema examples in the specification docs all use `(VARIANT)` rather than the final `(VARIANT(1))`
As verified on the parquet dev list, this is incorrect
