    Fix quartz example README: correct copy-pasted description (#213)
    
    * Fix rest-openapi-simple example: note PetStore demo flakiness, drop redundant version
    
    The getPetById operation depends on the publicly hosted petstore3.swagger.io
    demo, which can intermittently fail (e.g. 500 errors) since it is outside
    our control. Document this in the README so it isn't mistaken for a bug in
    the example. Also remove the redundant explicit ${project.version} on
    camel-rest-openapi-starter, since it is already managed by the Camel BOM.

    * Fix quartz example README: correct copy-pasted description
    
    The README described "high and low numbers" output, copy-pasted from
    the pojo example. The quartz example actually logs a constant "Test"
    message every 5 seconds via a cron-triggered route.
