[I] [image-env-to-json] Make binary compatible with any architecture [incubator-kie-tools]

Currently, `image-env-to-json` only supports the x64 architecture. When running on new Arm machines, the underlying node `pkg` library relies on glibc for x64. That will always fail on Darwin arm CPUs.
Ideally, this package should also offer a way to copy the correct binary despite the OS and Architecture so we avoid clients having to do this:

@ricardozanini Hey there. I've opened a PR to include all missing native binaries. For the reported case, the `copy:image-env-to-json` scripts are used to copy the `image-env-to-json` linux binary before a Container image build, which will be used in a Linux container, so for this case, it must be used the `image-env-to-json-linux-amd64` (the new binary name).
