[I] Work out better strategy for "stable" [airflow]

### Body
For now "stable" is a copy of latest version of the provider / airflow docs. It used to be a symbolic link. I think currently we had at least a few cases where stable was a bit different than the released version and it cause some problems (like snowflake drop-down problem). We should think if there is a good way to keep stable and "latest" version the same - maybe we can implement some redirection rules ?

I think with our "staging" builds we do not need to do anything else. Things are good.
