[I] Custom headers not typed [couchdb-nano]

This section https://github.com/apache/couchdb-nano?tab=readme-ov-file#custom-headers mention we can pass custom default headers and is replacing requestDefaults. However, typescript does not let me do so as the config is not typed to support that.
