[PR] [core] Fix partition timestamp pattern replacement for prefix variable names [paimon]

juntaozhang opened a new pull request, #9136:
URL: https://github.com/apache/paimon/pull/9136

   ### Purpose
Fix a bug in `PartitionTimeExtractor#extract` when the partition timestamp pattern contains variables whose names share a common prefix.

   ### Tests
     - Added `testPatternWithPrefixVariableNames` in `PartitionTimeExtractorTest` to cover patterns with prefix-sharing variables:
       - `$dt1-$dt-$dt2 00:00:00`
       - `$t $t2:$t3:$t4`
