[PR] Port Python test to Elixir: `18-json-sort-tests` [couchdb]

## Overview
**Note: This PR is dependent on this [base PR](https://github.com/apache/couchdb/pull/5753) to be merged.**
This work is done according to "Milestone 3. Convert Python test suite to eunit or exunit" as stated in the Scope of Work with [Sovereign Tech Agency Resilience Program](https://www.sovereign.tech/programs/bug-resilience).
This PR includes:
- Port `01-index-crud-test` test to Elixir
- Remove the corresponding Python test
- Extend `test/elixir/test/support/mango_database.ex` with needed functions
## Testing recommendations
Run:
`make elixir` or make elixir tests=test/elixir/test/mango/18_json_sort.exs`

Only informational, there are some open PRs for porting the python tests to elixir, but they are not reviewed or merged… e.g. #5785
