[ISSUE #11312] fix(docs): use existing trace-enabling constructors in Operations_Trace.md

The 4.1/4.2 snippets built DefaultMQProducer/DefaultMQPushConsumer with
(String, boolean), a signature that does not exist; the trace constructors
take (String, boolean, String customizedTraceTopic). Pass null to keep the
default trace topic, consistent with section 4.3 of the same page.
