docs: use the real release version in install snippets (#1257)
Both READMEs told users to write <version>version</version>, which is not a
placeholder Maven understands - it is a literal version string. Copying the
snippet fails with "Could not find artifact
org.apache.fesod:fesod-sheet:jar:version".
The same snippet was reported in #645. The issue was closed after the
artifactId was corrected from fesod to fesod-sheet, but the version was left
as "version", so the snippet still does not work.
Use 2.1.0-incubating, the current release, and point at Maven Central so the
next version bump is easy to notice.
