[I] Contribution docs still reference the old core/ directory layout [texera]

Several docs pages still point at the pre-ASF `core/` source tree, which no longer exists:

`micro-services-local-dev.md` documents the now-finished `core/micro-services` migration and scripts that no longer exist, so it can be removed.
