   Saw this one fail multiple times already.
   
   Previously, we were counting the exact number of calls each of the mocked functions were called. However, those calls were made from separate processes with non-deterministic number of retries each, so sometimes, there could be 8 calls, 9 or 10. (Confirmed by adding random sleep in `mem3_reshard_index:retry/3` to reproduce it locally).
   
   We mainly care that the shard is split, the indices finished building, and that those mocked index functions were called more than 4 times due to retries so let's make the test do that instead.
