Using alternate SA in individual user account

I am reasonably experienced at using SpamAssassin, but most of my
installations are Mac OS X/Mac OS X Server boxes triggering SA via Amavis
from Postfix. I haven't had much need until now to fully understand how
messages arrive at SA and are then passed on for delivery. My apologies for
missing obvious answers related to this!

Anyway, I have a client making use of a 3rd party Web/email hosting account
for his domain. The server he is parked on already has SpamAssassin
installed, but (1) it isn't current, (2), some of the more effective tests,
like Razor, are turned off, and (3) it is missing a lot of obvious spam
emails (one scored 2.8 on his host, whereas my MOSXS box scored 16.0!).

I am attempting to route his email through a newer copy of SA that we can
tweak, which is installed in his individual account. I have followed some of
the directions for SingleUserUnixInstall here:

I have successfully installed v3.3.1, and it is scoring better than the
default installation on that server, but my improvement breaks down when
actual mail arrives (rather than my text test files)-- since I am not
"intercepting" these messages, they go right through the default SA install,
not mine. I am unsure what to do regarding the Procmail section of the above
directions. This server is using Exim and Dovecot, along w/ the daemonized
SA, spamd. It does not have Procmail installed or any Procmail forwarding
that I can see. That said, I don't know much of anything about Procmail,
other than it locally delivers mail. But AFAIK, that's what Dovecot is doing
on this server.

So, I'm currently stuck trying to figure out how to get my newer, better SA
install to "pick off" the incoming mail and process it, rather than letting
it continue through the suboptimal default SA install. Can someone point me
in the right direction?
