   ### Describe the enhancement requested
   
   CMAKE_UNITY_BUILD allows to significantly speed up non-optimized builds (often by 20-25%), as a lot of their time is spent parsing C++ code. We should go through our CI _and_ nightly builds and enable this switch where it's still disabled.
   
   This also includes R, C/GLib and Python builds, which can spend a significant portion of time building Arrow C++.
