Update to project quick start

We've discussed in the past using the standalone controller as the new quick start. Earlier today I was trying to help someone in the community slack and I had trouble bringing up the compose version of the existing document quick start. Plus it took many minutes to pull all the docker images. By contrast standalone is much lighter weight. I opened a PR to highlight the standalone controller instead. https://github.com/apache/openwhisk/pull/4880
