On the "Table Configuration" doc page, in the section "VERSIONING ITERATORS AND TIMESTAMPS" (at http://accumulo.apache.org/1.4/user_manual/Table_Configuration.html#Iterators), there is no mention of how to disable the iterator completely. It would be a nice addition. For tables created programmatically, this can be achieved by using TableOperations.create(tableName, false).
