ex. 2013.03.10 will become 13/3/10 automatically
how can I change that installation?

Assuming you are referring to the displayed date formats in Calc cells:
* Select/highlight the cell or range of cells to be formatted.
* From the menu choose "Format -> Cells..."
* In the dialog (window) that opens click the "Numbers" tab.
* Under the "Category" list click "Date".
* Replace the entry under "Format code" with YYYY.MM.DD
* Click the tick/check mark (Add) button & click OK.
The default format that Calc uses internally cannot be changed and will
always appear that way in the "Formula Bar".
