I think you have to run mvn eclipse:eclipse and then they are generated, as far as I know mvn package or install doesn't generate those.

As it stands, you could check the source out into an Eclipse workspace and then start working, and not have to worry about maven at all. That seems like a nice thing, but I will leave this open for now so others can chime in.
