[~markap14] This probably can be done easier after we merged NIFI-4004. With that, we can pass arbitrary String variables as hints for a record reader to retrieve a desired schema as suggested by this JIRA.

> It would be nice to be able to set the schema.name property for the reader and writer on the ConsumerKafkaRecord processor so that the schema names can be set based on the topic name. This would let me specify a pattern for the topic names. It would also be nice if I could use EL on the topic name so that I can pull off any namespacing.
