Guys, I proposed a workaround still on top of the same lightcouch fork [here|https://github.com/apache/camel/pull/3725].
It should push the compatibility up to 2.3.x.
Concerning 3.x, I would open another issue in order to create a new camel-couchdb3 component where we could select another library like [java-cloudant or Erktop|https://cwiki.apache.org/confluence/display/COUCHDB/Java].
