Not really tutorials, but enough to get the idea, I think:

* http://xmlgraphics.apache.org/fop/dev/extensions.html -> For FO  
extensions in FOP
* http://xml.apache.org/xalan-j/extensions.html -> For XSLT  
extensions in Xalan
