What do you mean by invalid signature? Does Acrobat/Reader show a yellow exclamation mark. Could you upload a sample file with the correct signature and after the text was applied.

Did you do an incremental save or a full save?

When you change a signed document there will always be a hint within Acrobat/Reader about the fact that the document has been changed after the signature. Using Acrobat the user would be able to chekc which changes were done to the document. That's normal for a signed document and not a misbehaviour.
