Review Comment:
I'm totally cargo-culting this. Let's see if I can make that work.

Ah, okay. Thanks. Yes, we clearly want to update packaging.yml too, then, but my immediate concern is that a build break got checked in because we're not even running a build in CI today. Running tests and building release artifacts will be "next steps".

packaging.yml is the pipeline triggered for releases, if you need to build binary artifacts. If not there is no issue.

Thanks, Curt. I started down a similar path in https://github.com/davidhcoe/arrow-adbc/blob/0322c175d7e9761dcf1471d43a0ff95354c218f3/.github/workflows/packaging.yml#L831 as part of addressing https://github.com/apache/arrow-adbc/issues/1121. At that time, @lidavidm said the scripts needed to go in [/.github/workflows/packaging.yml](https://github.com/apache/arrow-adbc/blob/main/.github/workflows/packaging.yml). Not sure how the current setup will build the csharp.yml file.

However it works, you can see in the "All checks" list that there are now three C# builds and all have passed.

Review Comment:
I guess we're not using the docker-compose definition? Do we need it at all?

Review Comment:
If the platforms are identical, could we consolidate them into a matrix argument?
