[Wiki] Stratos Configuration Definitions

The definitions for Stratos configuration files have been documented in
[1]. Please let me know whether any further information can be added to
improve the content.

Note that the same definitions have been duplicated for the 4.1.0 docs with
the exception of the JNDI configurations as JNDI will be replaced by MQTT
in 4.1.0.
