Resolution: Not A Problem
Turns out that if you stringify the JSON, it can be inserted correctly into a JSON field in at least Postgres and MySQL. Closing for that reason. The current recommendation is to use two schemas. One that has a full sub record representation and the second which replaces that with a string.
