   @ludlows thanks for opening this PR. The `version.txt` is created as part of the release process: https://iceberg.apache.org/how-to-release/#creating-a-release-candidate and having it in the repository is redundant since the version information is also kept by Gradle. I would prefer to keep it so the versions won't diverge.
