[FLINK-40951][docs] Translate Flink source connector docs into Chinese

Sync docs/content.zh/docs/connectors/flink-sources (except tutorials)
with the current English docs: translate untranslated files, backfill
sections and options added to the English docs, and normalize
terminology across files.

Also fix formatting and consistency issues found during review:
- replace triple-backtick inline code with single backticks
  (scan.startup.mode in 7 connector files, 0s in mysql-cdc.md)
- restore details dropped in translation (global read lock
  FLUSH TABLES WITH READ LOCK, RELOAD inline code, bold formatting)
- unify the "chunk" translation across all files, including the
  chunk reading algorithm section and its anchor in mysql-cdc.md
