[FLINK-40622][Connectors/Kafka] Stop readers recreating the deleted topic in SourceTopicIntegrityTest

The deleted-topic cases of testTopicIntegrityFailure assert the job fails
with "Topic ... is missing". Neither the broker nor the source consumer
disables topic auto-creation, so after the restart a restored reader
polling its checkpointed partitions recreates the source topic. The
enumerator's integrity check then finds a topic with a fresh id and
reports "was recreated", the awaited message never appears, and the wait
times out.

Which side wins is a race between the restored readers and the first
discovery pass, so the test failed only under load. Raising the wait in
FLINK-40589 could not help; the awaited message was never coming.

Disable auto-creation on the source consumer so a deleted topic stays
deleted. Do not drop this property: without it the failure returns as a
load-dependent flake.
