   There's a few ways (probably too many ways) that the Jackson `ObjectMapper` can be customized for use in `JacksonDataFormat`. We should document them in the Camel Jackson docs. E.g
   
   * Producing a custom object mapper and having it used in `JacksonDataFormat`
   * Leveraging the Quarkus Jackson `ObjectMapper`
   * Various different ways of referencing the `JacksonDataFormat`. E.g by reference or by bean name.
   * How to customize for JSON binding in the REST DSL
