[~carlosmunoz] [~benradey] - I have returned to this issue and created what I think is a definitive fix for SLING-7811.

In my tests now the MongoDB-based setup is stable. If you have the time, you could try our jcr.base 3.1.2 release candidate, either pre-built from https://repository.apache.org/content/groups/staging/org/apache/sling/org.apache.sling.jcr.base/3.1.2/ or from source https://github.com/apache/sling-org-apache-sling-jcr-base/tree/org.apache.sling.jcr.base-3.1.2 .
