[PR] perf(table): avoid cloning cached snapshot manifests [iceberg-go]

**What**
- Reuse cached manifest slices in read-only table paths.
**Why**
- Cache hits copied every manifest descriptor before planning.
- With 10,000 manifests and two cached scans, the benchmark allocates about 328 KB less per operation.
**Implementation**
- Add borrowed accessors for all and data manifests.
- Keep defensive-copy accessors for callers needing independent slices.
