Jacques, 

The list of statuses can be configured per project, however this means a custom workflow will need to be created. This will then mean you no longer follow the JIRA default. 

If you project wants this, please can I ask that you describe (preferably in a flow diagram) the way you would like all your JIRA to be able to transition.  i.e. 

OPEN -> DONE
OPEN -> In Progress
DONE -> Re-opened
Re-Opened -> In-Progress

etc

Note that you will need at least 2 status types (open and closed) - however this rarely meets the social expectations. I urge you to think about this carefully. 

I will also ask you think it through as it will take a JIRA admin quite a bit of time to create the workflow for you, and constant changes will not be very welcome as changes to the workflows mean a re-index is required.  A re-index takes JIRA offline for about 2 hours.
