The `schema` has to be described in JSON format.
Can you try this?

{
    "type":"PROTOBUF", 
    "properties":{},
    "schema":"{\"type\":\"record\",\"name\":\"Personne\",\"fields\":[{\"name\":\"nom\",\"type\":\"string\",\"default\":\"\"},{\"name\":\"prenom\",\"type\":\"string\",\"default\":\"\"}]}"
}
```
