[PR] docs: document full release process and fix setup-gradle deprecation [struts-intellij-plugin]

## Summary
- Expand the README release section to document the full two-phase release flow (CI, nightly, prepare, publish, post-release PR), version numbering, and a release checklist
- Fix the `gradle/actions/setup-gradle` deprecation warning by replacing `gradle-home-cache-cleanup: true` with `cache-cleanup: always` in all workflows (`build.yml`, `nightly.yml`, `prepare_release.yml`, `release.yml`)
## Test plan
- [ ] Review README release documentation for accuracy against workflow files
- [ ] Re-run **Prepare Release** workflow and confirm the deprecation warning no longer appears in the job summary
