How can I change the password to a james user?

Wich version of James are you running ?

You can use command line client with version 3.0.betax.

/bin/james-cli.sh -h 127.0.0.1 -p 9999 setpassword username password

Username might be local part of the email, or the whole email, depending
of virtual hosting option.
