The syntax should look something like this (proposed by [~alexvanboxel]):

my_timestamp TIMESTAMP *OPTION(ref="pubsub:event_timestamp)*,
my_id VARCHAR *OPTION(ref="pubsub:attributes['id_name']")*,
name VARCHAR,
age INTEGER
)

LOCATION 'projects/my-project/topics/my-topic'
