I have found there is a confluence wiki page containing information about rolling upgrades:

https://cwiki.apache.org/confluence/display/GEODE/Notes+for+rolling+upgrade+updates

For keeping the wiki tidy, it should be evaluated if the info contained in this page should be added to the user guide, as after GEODE-8946 there is an upgrade chapter in the user guide.
