[PR] [DNM] chore(ci): two surefire JVMs in the remaining Java test jobs [hudi]

databird07 opened a new pull request, #20377:
URL: https://github.com/apache/hudi/pull/20377

   ### Describe the issue this Pull Request addresses

Test-only PR, not for merging. It is stacked on #20364 and gets a real GitHub Actions run for running two surefire JVMs in the remaining Java test jobs (Java tests parts 2 and 3, utilities, spark-client). Java tests part 1 already does this in #20364. If this run is green and the 20-run local flakiness and coverage checks pass, the last commit gets folded into #20364 and this PR is closed.

   ### Summary and Changelog

Only the top commit is new; the rest are #20364.

   - `pom.xml`: the `functional-tests`, `functional-tests-b` and `functional-tests-c` profiles used `${forkCount}` instead of a hard-coded `1`. The root property defaults to `1`, so local builds don't change.
   - `bot.yml`: the Maven test commands in Java parts 2 and 3, utilities and spark-client pass `-DforkCount=2` and write one JaCoCo file per JVM (`jacoco-fork${surefire.forkNumber}.exec`).
   - `HiveTestService`: the HiveServer2 port comes from `HoodieTestUtils.toForkUniquePort(9999)`, so two JVMs don't fight over port 9999. It stays 9999 with one JVM.

   ### Impact

CI only. What to compare against #20364: job times, test counts and Codecov coverage.

   ### Risk Level

low (test PR, not intended to merge)

   ### Documentation Update

   none

   ### Contributor's checklist

   - [x] Read through [contributor's guide](https://hudi.apache.org/contribute/how-to-contribute)
   - [x] Enough context is provided in the sections above
   - [x] Adequate tests were added if applicable

CI passed on every job here (parts 2 and 3: 50.2 -> 35.4 min and 42.4 -> 23.7 min). Folded this commit into #20364, together with a fix for a fixed ZooKeeper port in TestHoodieDeltaStreamerWithMultiWriter, so closing this test PR.
