fix: exclude macOS AppleDouble metadata files from protobuf compilation (#692)
macOS writes ._* AppleDouble metadata files on non-native filesystems
(exFAT/FAT/NTFS). They match the protobuf-maven-plugin default include
**/*.proto and are passed to protoc, which fails with "Invalid control
characters encountered in text" and breaks the build.
Exclude ._* from protobuf compilation and ignore ._* / __MACOSX/ in git.
