access logs from a particular source

What method is commonly used to retrieve/view the equivalent of one
service on one server for a specified time frame? For example, the
catalina.out log from server abc123 for yesterday?

 

We are planning to deploy VMs with readonly filesystems and won't have
access to historic logs.
