[I] Ordering with Closures generated for Gorm Services [grails-core]

### Issue description
Grails Spring Security had a reproducibility issue with the 7.0.0-RC2 release in the acl-plugin-7.0.0-RC2.jar. The closures are being processed in random ordering, which is causing them to mismatch. See attached diff.

[ServiceTransformation](https://github.com/apache/grails-core/blob/7.0.x/grails-datamapping-core/src/main/groovy/org/grails/datastore/gorm/services/transform/ServiceTransformation.groovy) is the cause of this issue.
