Make the [assemblePartPath|https://github.com/apache/flink/blob/master/flink-connectors/flink-connector-filesystem/src/main/java/org/apache/flink/streaming/connectors/fs/bucketing/BucketingSink.java#L663] method  in the BucketingSink protected. This will enable creating dynamic part prefixes in use cases where they are required (for e.g. adding a datetime prefix to the filename)
