[I] Update Iceberg integration to use `native_iceberg_compat` scan [datafusion-comet]

### What is the problem the feature request solves?
Comet's Iceberg integration currently uses `native_comet` scan, which does not support complex types.
We are still working on completing the current integration, and then would like to move to using `native_iceberg_compat` instead for complex type support.

@Shekharrajak This is an old issue. We have not been able to move forward with the Iceberg Java integration. There is a PR open against Iceberg (https://github.com/apache/iceberg/pull/13786) to enable this integration but it is stale.
There is an issue discussing the future of Iceberg support at https://github.com/apache/datafusion-comet/issues/2921.
