[PR] Add a section to the migration doc talking about migrating from the junit5 testing components to junit6 [camel]

Add a section to the migration to mention that junit5 -> junit6 migration is not mandatory (the camel-test-junit5 components are available and still pinned to JUnit 5) - but explain how to do it if it is desired.
