IMO , extending the entity model for this is not necessary. 

If it is about a Sales Order registered in the back-end, there is no certainty that the check made out to the company will be the same as what was said (by the customer or its representative) during the ordering. In a B2B order from a large company, the party ordering may not have control the payment process and thus not over what check reference will eventually and actually be used.

Furthermore, the entity model has ample other means to cater to registering a 'potential' check reference, either via the OrderAttribute entity or via the OrderNote entity.
