Whilst I did toy with the idea, it's not really solving my problem I 
really want to know why it's doing this.

I may of found a clue and it could be in the way I'm calling spamc.
If spamassassin cannot find the user on the system does it revert back 
to using the root user?

As I'm using Virtual accounts and I'm passing in the recipients email 
address rather than the username to the -u option, this is working great 
with the sql query; but I think it it may being trying to find that user 
and cannot so reverting to using the root account to write to.
