   Maybe we can introduce a new type for `--type-mapping`: https://paimon.apache.org/docs/master/how-to/cdc-ingestion/#special-data-type-mapping

   added type mapping option: char-to-string
   
   maps MySQL CHAR(length)/VARCHAR(length) types to STRING.
