[PR] PXF3: upgrade Spring Boot to 3.5.16 and Tomcat 10 [cloudberry-pxf]

ostinru opened a new pull request, #166:
URL: https://github.com/apache/cloudberry-pxf/pull/166

   ## Summary

   - Upgrade the server to Spring Boot 3.5.16, Spring Framework 6.2.19, and Tomcat 10.1.60 on the existing Java 17+.
   - Migrate the service to Jakarta Servlet and JAXB APIs. Keep the legacy Servlet API available to the Hive 2 libraries.
   - Move PXF HTTP metric tags to Spring's server request observation convention [(migration guide)](https://github.com/spring-projects/spring-boot/wiki/Spring-Boot-3.0-Migration-Guide#micrometer-and-metrics-changes).
   - Update automation's Spring dependency.

   ## Migration details

     - 3.0.13: Move the PXF web service to Tomcat 10.1 and Jakarta Servlet/JAXB APIs. Replace WebMvcTagsContributor with a server request observation convention while preserving PXF’s `user`, `segment`, `profile`, and `server` metric tags. Update the HTTP header size property and replace the old SLF4J MDC mock with Mockito static mocking. Keep the legacy `javax.servlet` dependency needed by Hive.
     - 3.1.12: Remove explicit Mockito and Byte Buddy version overrides so the Spring Boot BOM manages them. Keep Apache HttpClient 4.5.14 explicitly associated with the AWS SDK dependencies.
     - 3.2.12: Update the PropertiesLauncher class name used by the packaged service and switch the metrics integration test to `@AutoConfigureObservability`.
     - 3.3.13: Update Prometheus assertions for the new scrape format. Adjust JSON error expectations to Jackson’s hardened output [(jackson change)](https://github.com/FasterXML/jackson-core/issues/991).
     - 3.4.13: Replace `TaskExecutorBuilder` with `ThreadPoolTaskExecutorBuilder` for PXF’s response streaming executor, and use the new shutdown endpoint access property.
     - 3.5.16: Align the PostgreSQL driver and automation’s Spring Beans dependency.
Spring Boot 3.5 upgrades JUnit 5 from 5.11.4 to 5.12.2. Gradle 8.14.4’s bundled test launcher cannot discover tests with the new version, so add junit-platform-launcher to the test runtime classpath. [(gradle best practices)](https://docs.gradle.org/8.14.4/userguide/upgrading_version_8.html).

I definetly, recommend reviewing on per-commit basis. It makes code review trivial. Each commit is tested in ostinru/cloudberry-pxf#60.

For now, the main can be used as a development branch. The CI workflow gives us basic assurance. I think this is good for the main.

If something goes wrong, we can always revert the commits. For a new release, we have to go through a release workflow. This is difficult for us as a project that is still in incubation.
