[ASTERIXDB-3712][JDBC] Exclude unrelocated Jackson multi-release classes from dist jar
Shade doesn't relocate classes under META-INF/versions, so the dist jar
kept jackson-core's META-INF/versions/{11,17,21}/com/fasterxml/...
classes and META-INF/versions/9/module-info.class under their original
names (28 entries).
The jar isn't Multi-Release, so the JVM never loads them and they can't
clash with a user's Jackson. They are dead weight, and the stray
module-info names com.fasterxml.jackson.core, which can mislead
dependency scanners. Exclude META-INF/versions/** in the Jackson shade
filter. Don't add Multi-Release: true instead, which would make the
unrelocated classes loadable.
